Coconut icebox cookies
INGREDIETS
1/2 cup butter
1 cup white sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon coconut extract
1 3/4 cups sifted all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup shredded coconut

DIRECTIONS
1. Cream butter or margarine, add sugar and continue creaming until light and fluffy. Stir in egg, vanilla and coconut flavoring.

2. Sift the flour with the salt and baking soda. Alternately add the flour mixture and the shredded coconut to the creamed mixture. Form dough into sausage shapes about 2 inches in diameter. Tightly wrap dough and chill for several hours or overnight.

3. Preheat oven to 375 degrees F (190 degrees C). Remove dough form refrigerator and cut into 1/4 inch slices. Bake on an ungreased cookie sheet for 10 minutes.

几点心得:
1) 西点中的 butter 可用 margarine 代替
2) 糖的用量可酌减
3) baking soda 的使用与否,并不影响口感;
4) vanilla extract, coconut extract 可有可无;
5) 没有 shredded coconut 亦无所谓;
6) 不讲究卖相的话,可以直接进烤箱,不必入冷藏室数小时。
